Upside down chicken ,veg & rice bake


This time I lined the tin with different grilled veg. Aubergine,green pepper,marrows and mushrooms all grilled. Then I fried 2 large chopped onions and added some madras curry and mixed spice ,when the onions were soft added 500 g chicken chunks (bite size) and fried until cooked seasoned and let it simmer until it was very tender. In another pot I fried a chopped onion ,added 1 teaspoon turmeric ,then added 500g rinsed Basmati rice and fried for a few minutes stirring . Added 1ltr chicken stock ,seasoned and let it simmer after it started to boil until the water was absorbed . Let it cool a bit then mixed in 1 beaten egg and 1/2 cup milk.
Line a spring form tin with greased baking paper. arrange the grilled veg on the base. Then spread the chicken mixture over the veg. After add the rice. Smoothing the top . Bake in a preheated 180 C oven until it is firm. Leave to cool slightly then run a knife around the edge and open the spring form and invert on a large serving plate .
