Tarja Moqlija – Vermicelli Frittata



My mum says when she was pregnant with me she used to want to eat this almost everyday and when I was young I used to ask her to cook it often. Now I cook it for my family .It’s a simple yet tasty meal.

This is the basic recipe but I sometimes add left over diced chicken ,instead of onions I use leeks ,add cheese and spices like turmeric,cumin and curry and to my husband’s portion i mix in some chopped chili .

 

 

Ingredients:

• 500g vermicelli

• 6 eggs

• 1 finely sliced onion

• 4 chopped or squeezed garlic cloves

• grated cheese

• seasoning

 

Cook the vermicelli in lots of salted boiling water,mind not to over cook as its done quite quickly.

Drain and rinse under cold running water to cool,strain well.

Beat 6 eggs and mix with the vermicelli

Fry the onions & garlic then add to the eggs & vermicelli.

Season well to taste.

Heat a non stick frying pan the size of a plate so you can make individual servings.

Put some oil and when its hot put the vermicelli mixture in the frying pan and pat flat and even in the frying pan

From this recipe I make 4-5 servings,depends how thin or thick you prefer it.

Let the bottom get nice and crispy then carefully flip it over and cook the other side.

You can sprinkle some grated cheese on top and as the bottom cooks the cheese will melt nicely.

We like to spread or drizzle bovril over it or Hp sauce or ketchup or grated cheese , there are people  who even like  branston pickle or chutney.
