Tamarind chicken

Tamarind is an ingredient widely used in Asian ,Indian & Middle Eastern recipes. It is found in worcestershire & Hp sauce . It is also used as a refreshing drink mixed with water . For this recipe I used Tamarind Syrup as a base for my marinade.


Marinade-1/2 cup Tamarind syrup

1 tablespoon soy sauce

3 crushed garlic cloves

1 teaspoon mixed spice

pinch of dried chili

Mix the marinade ingredients in a bowl.

Prepare the chicken drumsticks and breast rubbing them with some salt and pepper.

Add to the bowl and mix in with the marinade . Or you can put them in a plastic bag and add the marinade and then let them marinate for an hour or two or more.

Preheat oven 190C.

Melt some butter in a frying pan and fry 2 sliced onions then add sliced mushrooms. Fry for a few minutes.

Put the onion and mushrooms in a baking dish. Place the marinated chicken pieces and pour the marinade over the pieces.

Cover with foil and bake for about 30minutes.

Check to see if cooked through ,then uncover and let it get golden brown.
