Strawberry & Yoghurt Muffins

These are really moist and so quick & easy to make. In 10 minutes the mixture is ready and in the oven and while you do the washing up they will be almost ready.
In a bowl sift 2 cups flour with a tablespoon of baking powder,1/2 teaspoon ground cinnamon,and 1/2 teaspoon of salt. Mix in 3/4 cup of sugar.
In a jug whisk 1 cup strawberry yoghurt,1 egg,1/3 cup of oil or 6 tablespoons of melted butter and 1 teaspoon of vanilla.
Pour the mixture over the flour and mix until all the flour is incorporated. Do not over beat or else the muffins will be dense .
Fold in 1 cup of roughly chopped strawberries.
Fill 2/3 of the muffin cup cases with this mixture and bake in a preheated 175 C oven for about 18-20 minutes .
After they cool you can decorate with cream or glace icing .
