Spinach Omelette

This is a favorite of mine . When I make a family sized omelette I cook it in a large frying pan ,cook the bottom side on the cooker then when the bottom has set I put the convection oven cover over the frying pan or put the pan in the oven under the grill until top sets.

I like to serve this after a soup starter with crusty bread,cheese ,chutney or relish & pickles and a platter of cured meat.


  • 500 g thawed frozen spinach or fresh sauteed spinach leaves. Squeeze as much water as you can.
  • 6 eggs
  • 1/2 cup milk
  • 4 squeezed garlic cloves
  • seasoning


1. Mix all ingredients well in a bowl .

2. Heat a large frying pan and add some oil

3. Pour the egg,spinach mixture in frying pan and level

4. With the fish slice end move around the edge of the frying pan as it is setting

5. When the bottom is set either flip it over or put the convection oven lid over the pan or put under a hot grill .

You can serve this hot or cold.
