Spicy Prawns and Rice

Thaw if using frozen prawns ,put in a bowl season with salt and pepper ,add the juice and zest of a lemon . Heat a large deep frying pan or a paella pan ,add some butter and oil and when its hot put the prawns in and stir fry for about 2 minutes then transfer the prawns and their cooking juice to a bowl. Add some more oil to the pan , add 4 large crushed garlic cloves with a piece of grated fresh ginger and a sliced
fresh chili or a pinch of dried chili.1 teaspoon of turmeric,1 teaspoon of curry ,1teaspoon of cumin, Fry for a minute or two then add diced onion and sweet pepper,When the onion softens add 2 cups of Basmati or Thai rice . Stir in and cook for a minute or so then add 3 and 1/2 cups of stock or water. Season to taste and let it cook uncovered on medium heat until the water is absorbed . Turn heat to low ,add the fried prawns and their juice ,do not mix in leave on top. Cover with a lid and let it cook for about 8 minutes. Turn off heat and let it stand for about 10 minutes before serving. Garnish and add more flavor by sprinkling fresh chopped parsley on top.DSCF3823 DSCF3815
