Spaghetti & meatballs


This is one of my family’s favorite meals. It was mine as well when I was at home. My mother makes the most delicious meatballs never tasted better than the ones she makes. Today I decided to bake not fry the meatballs. Came out really good ,will be baking them from now on .
To make the meatballs I used 750 g finely minced beef. Twice minced comes almost like sausage meat. Put in a bowl ,add seasoning ,1/2 teaspoon garlic powder,1 tablespoon worchestershire sauce,1 teaspoon onion powder ,1 teaspoon sweet paprika,1 tablespoon ketchup sauce and 1/2 teaspoon oregano . Drizzle some oil on your hands and knead to mix in the flavours well then form into balls and put on a lined baking tray,lightly grease the baking paper with some oil. Put the meatballs on the baking tray and bake in a preheated 180 C oven for about 18-20 minutes.
In the meantime prepare the tomato sauce.
Heat some oil in a saucepan and saute a large chopped onion and 2 chopped garlic cloves,add half a sweet red pepper finely diced. Mix in 3 tablespoonfuls of tomato paste and let it fry a bit .Then 1 tin of cherry tomatoes in tomato sauce and tin or packet of thick tomato juice (passata) 1 cup of beef or chicken stock,salt & pepper to taste,a few dashes of red chili sauce if you like it spicy and a few pinches of oregano rubbing the herbs between your fingers to release the flavour.
When the meatballs are ready put in the sauce and simmer partially covered so the sauce thickens slightly.
Cook the spaghetti until its al dente then serve with the meatballs & tomato sauce,lots of freshly ground pepper and grated cheese.DSCF1596 DSCF1584 DSCF1588 DSCF1589 DSCF1591
