Smothered boneless ,skinless chicken thigh and potatoes with lemon & thyme


When we are sick we need to eat light and easy to digest meals .This is an easy meal to prepare and light to digest yet very tasty.

Smothered boneless ,skinless chicken thigh and potatoes with lemon & thyme

Sliced fresh onions,2 finely chopped garlic cloves,a layer of boneless,skinless chicken thighs ,lightly seasoned with salt ,sprinkling of fresh thyme ,lemon juice .Then layers of sliced potatoes, Seasoned with salt and some thyme on top and chicken stock . Put on the lid and put on medium heat when it starts to boil put on very low heat until the potatoes and chicken are very tender.DSCF2817
