Shredded chicken & broccoli soup

With this cold weather nothing is more welcome than some hot steaming plateful of hearty soup.This is a very filling tasty soup.
Heat some oil in a pot and lightly fry 4 chicken thighs on both sides for a few minutes then take out and put in a bowl and in the same pot saute 2 chopped leeks,2 garlic cloves,diced carrots and celery.Add 1 teaspoon turmeric and 1 teaspoon ras el hanout spice mix . If you wish to mix your own ras el hanout spice mix this is the recipe
2 teaspoons ground ginger
2 teaspoons ground cardamon
2 teaspoons ground mace
1 teaspoon cinnamon
1 teaspoon ground allspice
1 teaspoon ground coriander seeds
1 teaspoon ground nutmeg
1 teaspoon turmeric
1/2 teaspoon ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground anise seeds
1/4 teaspoon ground cloves
Mix all together put in a glass jar and use as required.
Put the chicken thighs back in the pot,1 cup peas ,add 2 litres hot chicken stock and season with salt and pepper. Let it simmer until the chicken thighs are very tender. Take out the chicken thighs and shred the meat off the bone using 2 forks. Add the shredded chicken meat and broccoli florets and let it simmer for another 10 minutes. You can serve it this way .
