Rugata tal-lews mor (orzata squash)

This morning I made my nanna Bice’s rugata ,I make it every summer . Takes me back to my childhood ,when I would be playing outside with my friends and my nanna would come out with big platefuls of hobz biz-zejt bill-kunserva or bit-tadam and refreshing cold rugata.I also love the lovely scent as its simmering of the infused cloves and cinnamon and the almond and cinnamon flavour.  DSCF9236DSCF9240
Rugata (orzata)
1 kg sugar
1ltr water
6 whole cloves quarter of a lemon
1 teaspoon vanilla essence
1 teaspoon almond essence
1 cinnamon stick

Stick the whole cloves in the lemon quarter.Put all ingredients in a pot and let it boil then simmer for about 15 minutes. Let it cool completely ,strain it in a bottle and add 2 teaspoons evaporated milk.
Use it like squash adding water Best when its cold and if you like a twist of lemon juice to it.
