Ross il-forn – Baked rice.
Ross il-forn for supper today. Its baking at the moment and there is such a lovely aroma at home. Today I added diced aubergine and zucchini to the meat when it was frying. I cook my meat & tomato sauce and then add the rice so I only use 1 pot.
Heat some oil in a pot and add 2 chopped onions ,1 tablespoon hot curry powder and 1 tablespoon turmeric,1/2 tablespoon all spice. Then I add minced lamb or beef and fry until it browns. Today added a large zucchini and half a large aubergine diced and 3 chopped garlic clovesthem and fried with the meat. 3 tablespoonfuls of tomato paste and 1 can chopped tomatoes and seasoned with salt and pepper and let it simmer for 15 minutes. Then added 3 cup long grain rice and 6 cups hot chicken stock. Let it cook until the liquid is all absorbed.
preheat oven to 180 C. beat 2 eggs with a cup of milk and hard boiled eggs cut in half lengthwise.
Put half the rice mixture in a greased baking dish,pour half the beaten egg and milk over and mix in with the rice mixture.Put the hard boiled egg halves over the rice then spread remaining rice and the egg and milk mixture on top.
