Roasted sliced potatoes


This is another method of roasted sliced potatoes. The bottom layer is sliced onions and red,green and yellow peppers . The bottom layer can be roasted as it is and used as a veg portion . I vary and add finely sliced eggplant,courgettes and tomatoes.

Roast sliced potatoes :

Slice onions ,green,yellow & red peppers thin slices,chopped garlic and put in a roasting tin.Sprinkle some sweet paprika,freshly ground pepper and salt. Scrub potatoes,slice not too thick,put in a bowl and season and add about 2 tablespoons olive oil and mix well. Then layer over the onions and peppers. Sprinkle pepper,salt,chopped garlic and paprika over each layer. On the top layer sprinkle some fennel seeds ,I used ground fennel seeds. 1/2 cup water ,more or less depending on the amount you are cooking and bake in a preheated 200 C oven until potatoes are done and crunchy on top.
