Roast Rabbit


Rub the rabbit pieces with salt & pepper. In a bowl mix 2 tablespoons mayonnaise,1 teaspoon mustard,finely chopped or squeezed garlic,2 teaspoons mixed spice,1 teaspoon garam masala,juice of a lemon,2 tablespoons brown steak sauce and worchestershire sauce,1 tablespoon sweet chili sauce. Whisk this mixture and rub it in the rabbit pieces. Let it marinate for a few hours .
Preheat oven to 200 C . Put sliced onion,carrots ,garlic and fresh or frozen peas in an oven dish. Season with salt & pepper and a few bay leaves. Pour 1 cup chicken stock . Then place the marinated rabbit on top .
Cover with foil and put in the oven. Let it roast on 200 C for 30 minutes then turn down the heat to 150 C and let it cook slowly . When its very tender ,remove the foil,and let it get golden brown.
