Roast mixed veg


Today I used up all the veg in my fridge because tomorrow we go buy fresh veg from the farmer’s market at Ta Qali . I was going to make a kapunata but then I decided to roast the veg. I sliced aubergine,green pepper,marrows,a big tomato,a big onion and garlic cloves .Put them in a large bowl,seasoned well with salt and pepper,chopped some fresh mint,some dried thyme,1 teaspoon turmeric,1/2 teaspoon cumin ,juice of 1 lemon ,2 tablespoons olive oil. Mix well then put on a baking sheet and cook in a 180 C preheated oven. After 15 minutes check and turn and mix veg so they roast evenly .DSCF9897 DSCF9890 DSCF9892 DSCF9893
