Roast chicken thighs (marinated in yogurt)


Marinating meat makes meat more tasty and juicy . One of my fave chicken marinades is yogurt marinade. There are different ones with different added spices.

Ingredients:

chicken pieces or chunks if using for kebabs

yogurt

piece of grated ginger or dry ground ginger

cumin

coriander

all spice

turmeric

cardamom

lemon juice

salt and pepper.

Method:

First rub the chicken pieces with the salt and pepper.

Mix the marinade ingredients and pour over the chicken pieces. Mix well to cover the pieces well with the yogurt. Cover with plastic wrap and chill in fridge until its time to cook.

Put the pieces in an oven dish and bake in preheated oven 190C until it starts to turn golden.

Turn the pieces over after 15-20minutes.

Then again after another 15minutes .

Cook for about 10 minutes more according to the size of the chicken pieces .

Serve with rice ,potatoes or couscous and veg or salad.
