Rice with green mung beans (Iraqi recipe called Mash)

First rinse the green mung beans ,put in a pot add 6 cups water and cook until its tender. Do not add any salt or else it will not cook and remain hard. Strain .
Heat some oil in a pot and fry a large chopped onion,add 1 teaspoon turmeric DSCF2211 DSCF2203 DSCF2204 DSCF2205 DSCF2208 DSCF2209and 1/2 teaspoon ground cumin,When the onion is soft add the cooked mung beans and fry for a couple of minutes,then add 3 cups rice and mix . Pour 6 cups chicken or vegetable stock ,season well ,cover and when it starts to boil put to simmer on low heat until all the water is absorbed. Let it stand covered for about 10 minutes before serving. Give it a good mix to fluff and separate the rice grains. Serve with thick natural yogurt ,date molasses or a tahina sauce.,made with 3 tablespoons tahina,1 tablespoon lemon juice,1/4 teaspoon ground cumin or fresh dill and salt & pepper according to taste and whisk. This can also be eaten as cold ,I add chopped tomatoes ,parsley etc and its a very nutritious rice salad .
