Rabbit Casserole



I prefer marinated fried rabbit with lots of garlic and crusty fresh bread to dip in the oil. This is one of my rabbit recipes. This recipe is more healthy using less oil. Also it is a complete meal. This can be left to simmer on the burner or in the oven. I use this recipe and substitute rabbit using chicken pieces and the result is just as delicious.

Ingredients:

• 1 rabbit cut into pieces and marinated in squeezed garlic,bay leaves,2 teaspoons mixed spice,salt & pepper,I use soy because as my husband is Muslim I do not use wine ,but one can use wine,a few dashes of worchestershire sauce. Marinate for a few hours or preferably overnight.

• 2 large onions sliced

• 2 large carrots sliced or choppe•

• 1 teaspoon ground cinnamon, 1 teaspoon mixed spice

• 5 large potatoes thickly sliced

• 4 cloves garlic sliced

• seasoning

• 2 cups water or stock

Method:

Heat a large saucepan ,add a little oil and when hot fry the rabbit pieces reserving the marinade, put the bay leaves in the frying pan .

Fry on each side until a lovely golden brown color,then put in a dish .

In same saucepan fry the sliced onions and garlic ,adding the cinnamon & mixed spice.

Then add the carrots & potatoes and fry a bit more.

Mix the water or stock with the reserved marinade and pour over the onion,carrot potatoes in the sauce pan.

Now you can either add the rabbit pieces and simmer in the saucepan  or you spread half the onion,carrots and potatoes on the bottom of an oven dish or casserole dish,put the rabbit pieces over it then put another layer of onion,carrot & potatoes.

Cover with foil or casserole cover and bake in 200C oven

Check and when rabbit is tender and potatoes are ready you can uncover if you want crispy potatoes .
