Qarabali mimli fl istuffat bl ghagin (Stuffed marrows in stew with pasta)

I like stuffed marrows cooked in broth or stew. Today I decided to add pasta to the stew. My family enjoyed it and they asked me to do it again so I thought I share my recipe.


  • 12 medium size round marrows ,washed and top stalk cut and flesh scooped out.I discarded the flesh but some chop it and add it to the filling.
  • 750g beef mince or pork & beef  as you prefer
  • 3 garlic cloves crushed
  • 1 teaspoon thyme
  • 1 snall onion finely chopped
  • finely chopped parsley
  • 1 egg
  • 2 tablespoons grated cheese
  • seasoning -salt and pepper


  1. Put the filling ingredients in a bowl and mix well ,I prefer to use my hands so they are well combined.
  2. Fill the marrow shells and if you have left over filling roll into small meat balls.



  • 2 large onions sliced
  • 4 garlic cloves sliced
  • 4 carrots sliced
  • 2 large celery stalks sliced
  • 1 small tin tomato paste
  • 2 bay leaves
  • 6 potatoes thickly sliced
  • 1 teaspoon mixed spice
  • 1/2 teaspoon ground cinnamon
  • 1 and 1/2 ltrs hot stock or water
  • seasoning

I did not add peas because my hubby and son do not like them but if you like you can add them.



  1. In a pot heat some oil and fry the onions,celery,carrots,garlic and bay leaves.
  2. Then add the mixed spice and cinnamon and fry for about 5 minutes.
  3. Stir in the tomato paste and cook for a bit then pour in the stock or water.
  4. Season according to taste and put in the marrows ,peas if using and on top place the potato slices.
  5. Cover and when it star
  6. ts to boil put on low heat and let it simmer .
  7. When ready take out the cooked marrows and poatoes with slotted spoon .
  8. Then add about 400g ditini rigate pasta to the stew.
  9. The pasta will thicken and absorb the stew.
  10. If you do not want to add the pasta just serve it as it is ,use less stock when preparing stew.
