Pumpkin,broad beans & mushroom risotto.


I prepared 1ltr hot chicken stock ,then fried some chopped onions and add some turmeric and curry ,added the chopped pumpkin and shelled broad beans and sliced mushrooms. When they were cooked I added 500g arborio rice and mixed it with the veg,then added the chicken stock slowly and stirred. You have to stir it until the liquid is absorbed then add some more stirring all the time. Continue until the rice is done . Before serving I stirred in some roasted cashew nuts.
