Pumpkin ,lentil & pea rice


1891075_558164700957142_833740170_nFor this rice dish I first made the soup Heat some oil in a pot then saute a large chopped onion,celery and 3 carrots & 3 peeled and chopped tomatoes.Add 1 teaspoon of turmeric,1/2 teaspoon of curry and 1/2 teaspoon of ground cumin. Add 500 g chopped pumpkin ,saute for some minutes ,add 1/2 a cup of red lentils and then pour 2 ltrs of chicken stock,,season with salt and pepper and add the juice of a lemon.. Let it boil then simmer partially covered until the pumpkin is cooked .
I used half of this as a pumpkin soup ,putting it in a smaller pot and blending it with a blender until it was a puree.The remaining soup I used for my rice dish.
Then to the remaining soup I added 2 cups of long grain rice and a cup of peas and let it cook on low heat until the rice was cooked and absorbed all the liquid.
