Pumpkin cake


First time I made this cake I cooked the pumpkin in some water then strained and pureed it. But when I made it again I decided to roast it in the oven and then pureed it. The taste was much better so I recommend that you roast it first.This is an easy and quick recipe to make .Pumpkin cake :

  1. Sift 2 cups flour in bowl with 2 teaspoons cinnamon ,1/2 tspn salt,1and 1/2 tsp baking soda and 2 tspn baking powder if you use self raising fl;our omit the baking powder.
  2. Add 2 cups light brown sugar,250g cooked pureed or mashed pumpkin,1 cup corn or veg oil and 4 eggs. Optional you can add 3/4 cup chopped walnuts or chocolate bits . I added 3/4 cup ground hazelnuts to mine because that is what I had.
  3. Mix it well then put the batter in a greased and floured tin. Bake in preheated 160C oven. In my fan convection oven it was ready in about 25mins . Depends what type of oven you have. The recipe I followed said 30-45mins .
  4. When ready leave it to cool and either cover with cream icing or dredge with sifted icing sugar & cinnamon .
