Pumpkin and barley soup with potato dumplings


A hearty soup that goes down a treat .
In a pot melt 1 tablespoon butter and a drizzle of oil.Fry 1 chopped onion and some chopped celery stalks.Add 1 teaspoon turmeric,1 teaspoon ground cumin and 1/2 teaspoon cinnamon.When the onion is a bit soft add 400g diced pumpkin and saute until its soft. Then add 1 cup pearl barley and 1.75lt chicken stock. Simmer until the barley is cooked.
In the meantime prepare the potato dumplings. I used instant mashed potato but you can use boiled mashed potatoes (2 cups).
In a bowl put i packet instant mashed potatoes,2 tablespoons dry onion flakes,1 teaspoon ground dill,1/2 teaspoon cumin ,salt & pepper ,chopped parsley and 2 table spoons flour. Pour 3/4 cup hot water and mix well then 1 beaten egg. Knead into a sort of dough , take bits of it and roll into walnut size balls.
When the barley is ready,you may need to add some more stock or water be sure to add it hot not cold . Season according to taste with salt Then add the dumplings and simmer for about 20 minutes or so.DSCF1242 DSCF1234 DSCF1235 DSCF1237 DSCF1239 DSCF1241
