Potatoes,onions ,green peppers,olives & capers in tomato sauce


A tasty way to serve potatoes. I like to serve this with fish .
Heat some oil in a saucepan and fry a large sliced onion ,add 1 teaspoon mixed spice,If you like spice food add a sliced hot green or red sliced chili. 1 large thinly sliced green pepper ,fry until the onion and green pepper soften.Then add sliced potatoes and fry a bit. Season with salt and 1 teaspoon black pepper. Add 4 sliced garlic cloves .Then either a tin of cherry tomatoes or 1 tin crushed tomatoes. 1 cup water ,half cup sliced olives,2 tablespoons capers,chopped thyme,basil,mint and parsley. Let it simmer until the potatoes are cooked. Sometimes I also add aubergines which I fry with the onion and green pepper before adding the potatoes.DSCF0359 DSCF0353 DSCF0354
