Potato & onion baked omelette

Peel and slice a large onion. I had about 8 small potatoes and as they had a thin skin I washed them well and thinly sliced them. Thin slices as if making crisps. Heat some oil in a non stick frying pan and fry the onion slices until soft then add the potato slices ,season well with salt and pepper and a teaspoon of paprika . Fry until potatoes are cooked. Put in a bowl and add 2 beaten eggs ,2 squeezed garlic cloves and a tablespoon of chopped parsley. Put in a greased baking dish ,some grated cheese on top,I used mature cheddar cheese. Then bake in a preheated 160C oven until nicely set. Take out of the oven and let it cool for about 8 minutes and turn out on a plate.
