Pies …Chicken & veg and corned beef & veg


My family love pies and I like to fill them up with loads of veg . Perfect hot or cold and made into small individual portions for a picnic or packed lunch.
Chicken & veg pie
500g short crust pastry
500 g minced chicken or chopped chicken breast
mixed veg I used carrots,peas, finely chopped potatoes
2 large onions chopped
1 tin tomato pulp
seasoning
1 teaspoon mixed spice
1 beaten egg & sesame seeds
In a big saucepan fry the onions in some oil add the mixed spice ,When onions are soft add the chicken and fry til cooked ,add the veg and tomato pulp & seasoning and simmer uncovered til it thickens .Take off heat and let it cool a bit.

Roll out pastry and cover a greased oven dish. Fill with the chicken & veg mix . Roll out pastry to make the top . Brush with the egg and sprinkle with sesame seeds . Bake in 180C oven until pastry is golden

Cornbeef & veg pie
Fry 2 large sliced onions,to it add 1 teaspoon mixed spice and some curry (hot or mild according to taste) Add diced carrots ,peas (as much as you like) diced potatoes (I used a frozen veg mix-russain salad) Mix in 2 tablespoonfuls tomato paste ,2 tablespoons brown steak sauce,a few dashes of worchestershire sauce and a cup of stock. Let it simmer on low heat for about 35 minutes then add a large tin of chopped cornbeef. Mix it in leave it for 5 minutes then take off the heat. Let it cool a bit before using to fill the pies so the pastry does not come soggy.
