Penne with salmon,cherry tomatoes & peas


As a starter for today’s fish lunch I made penne with salmon,cherry tomatoes and peas. Put a pot of water to boil for the penne. Meanwhile put some oil in a sauce pan and fry a chopped onion,when its soft add a chopped slice of salmon . Was about 250g . When the salmon is cooked add 1 tin of cherry tomatoes or fresh ones ,3 finely chopped garlic cloves and 1/2 cup of frozen peas ,chopped thyme ,mint and parsley and a pinch of dried or fresh chili ,ground pepper and salt to taste. Let it simmer until the penne are done. Strain the penne and reserve a cup of the penne cooking water in case the sauce is too dense. Mix the penne with the salmon sauce and sprinkle finely chopped herbs on top before serving. DSCF9748 DSCF9742
