Peanut butter & oats cookies

I had this recipe on my to do list and I decided to make them today. So easy to make and ready in a jiffy, 15 minutes is all you need to make and bake them .Only had to wait
for them to cool to taste them. They ‘re moreish and delicious with a glass of cold milk 🙂 Will be making many more of these for sure.These are good for those on a gf diet but they have to be sure the oats are gf.
I used a hand held beater to mix.Preheat oven 180 C. Put 1/2 cup crunchy peanut butter and 1/2 cup light brown sugar in a bowl. Beat well then add an egg and beat some more. Lastly add 11/4 cup quick cook white oats and 1/2 teaspoon bicarbonate of soda. Beat until all is mixed and you will have a stiff dough. Take walnut size balls of the dough and flatten slightly into cookie shape and put on a baking sheet or tray lined with baking paper. From this mixture I made 21 cookies . Bake for 6-8 minutes . Take out and let them cool before removing from baking tray.DSCF0296 DSCF0287
