Patata bil-basal -Potato & onion fry


I love this but I do not do it often because its fried and uses quite a bit of oil. I have tried doing it using less oil but it does not taste as good so once in a while I treat myself and family by making it. My mum does it beautifully and hers is the best I ever tasted .
Start by slicing 2 big onions ,heat some oil in a sauce pan,I find a non stick one is the best choice for this . When the oil is hot add the onions and let them fry stirring occasionally until they are soft. While the onions are frying peel some potatoes and cut into chips. Rinse,strain and dry with kitchen towel. When the onion is soft add the potatoes season well with lots of salt and pepper. Add some chopped garlic cloves and stir . Let it fry ,stirring from time to time so potatoes will all cook evenly. turn flame down and let it cook until potatoes are done .
