Pasta shells with avocado sauce


Looking through online recipes to get ideas how to use avocado not just as a dip I found this recipe and tried it. Super easy and very tasty.
Put water to boil for pasta ,I used small shells (500g) .
Scoop the flesh of 2 ripe avocados in a bowl and mash lightly,add a few chopped sweet cherry tomatoes,a chopped spring onion and some parsley,season with salt and pepper ,some lime or lemon zest and juice of a lime or lemon.
When the pasta is ready take 2 ladles of the cooking water and add to your avocado mixture and stir into a sauce. then mix the drained pasta with the avocado sauce and serve.DSCF1197 DSCF1195 DSCF1196
