Pancakes and stewed banana & apple filling


DSCF0924 DSCF0922 DSCF0923 I made these pancakes without baking powder as I was on holiday and only had plain flour but they still came real good and even light.
Mix 2 cups flour in a bowl,2 tablespoons sugar and a pinch of salt.In a jug mix 11/2 cups milk,4 tablespoons melted butter and 2 eggs. pour over the flour mixture and beat until you have a smooth batter. Put in the fridge for 10 minutes or longer before using. In the mean time peel a banana and apple and dice. Heat a small frying pan or saucepan and melt 1 tablespoon butter add the diced fruit and sprinkle 1 tablespoon cinnamon sugar (1 teaspoon cinnamon mixed with 1/2 cup sugar) I also added 1/4 teaspoon ground cardamom. Let them cook and add some raisins .When the fruit is cooked put in a bowl.
Cook the pancakes heating a non stick frying pan ,melting some butter and pour some pancake batter,swirl in the frying pan and when you see bubbles its time to flip the pancake. Cook on the other side then put on a plate. Cook remaining batter and stack the pancakes .
Serve with the stewed fruit,jam,nutella,maple syrup,honey ,cream or your fave filling.
