Orange & almond cake

This is a fragrant moist cut and come again cake . Perfect if you have a wheat intolerance or on a gluten free diet. Ground almonds are used instead of flour.


  • 2 oranges washed and boiled for 2 hours in enough water to cover them,check on them and top up with water if needed. You can also cook them in a pressure cooker for 1/2 hour. Let them cool a bit then slice open ,remove the pips and blend until smooth. Some peel them but I prefer not to peel them.
  •  250g sugar
  • 250g ground almonds
  • 1 teaspoon baking powder
  • 6eggs

Beat the eggs and sugar until white & fluffy .

Add the blended oranges,the ground almonds and baking powder  and mix well.

Put batter in a greased cake tin. I like to line the cake tin with a double layer of greased parchment paper .

Bake in preheated 190C ,gas mark 5 oven until a skewer comes out clean.

Let it stand in the tin for 5 minutes then turn out on a cooling tray.

Honey orange drizzle syrup:

Take about

  • 4 tablespoonfuls honey,juice and grated rind of an orange,
  • 2 tablespoons water and
  • 1 teaspoon orange flower water (ilma zahar) and boil in a small saucepan then simmer for a few minutes.
  • With a fork prick the cake top then drizzle the honey & orange syrup over the warm cake.
