My best friend Louise’s Birthday cake


My best friend Louise is a chocoholic. Wanted to fill the cake with more choc but the weather was too hot. The chocolate fudge was dripping off luckily it came back together once in the fridge and the chocs were melting in my fingers as I decorated.
I made it using my easy chocolate cake recipe . I made the recipe quantity plus 1/2 because I needed more as the tins were larger.
To make this cake you need to sift 2 cups flour ,3/4 cup cocoa,11/2 tspns baking powder,2 tspns baking soda and a pinch of salt in a bowl .Mix in 2 cups sugar. In a jug mix together 2 eggs,1 cup milk,1/2 cup oil,1 teaspoon vanilla . Add this to the flour mixture and beat well. Then add 1 cup boiling water with 1-2 teaspoons coffee (the coffee will not taste in the cake it just enhances the chocolate flavour.
It will be a runny batter . Put in lined cake tins and bake in a preheated 180 C oven for about 30-40 minutes depending on your oven. When ready let it cool a bit then turn out .
When cold I took a tin of ready caramel or you can make it yourself by boiling a tin of sweetened condensed milk for about 90 minutes then letting it cool. I prefer to use the ready made. I used only half the tin. Put in a small saucepan and heat on low flame when almost bubbling I added 150g broken chocolate and stirred until it melted. I also added some cut pieces of marshmallows and stirred until they started to melt then I spread on the cake . Let the filling cool then I sandwiched with other piece and covered with chocolate fudge icing.
