Mazzola (dogfish) slices stew and aljotta (soup)


Fried sliced onions,added some cumin and turmeric. Lots of chopped garlic using half the quantity while sauteing the fish pieces which I had previously seasoned and poured some lemon juice over them and let them marinate for about 30 minutes. Then I added some sliced potatoes seasoned well with salt and pepper added some water and sprinkled sliced olives,the chopped garlic and some herbs.Cover and simmer on low heat until the potatoes are done.

Mazzola (dogfish) is a type of shark that is popular ,it is skinned and makes lovely aljotta and i t has delicious tender flesh . Does not have lots of bones mostly gristle. I cooked the head and tail bit and some pieces in the colander over the fish soup so it cooked and infused its lovely juices and flavor in the soup.
To make the soup,heat some oil and fry a chopped nion,skinned and peeled tomatoes,chopped cloves of garlic,mint,basil,thyme,some turmeric,cumin and fresh or chili flakes. 2 tablespoons tomato paste then add water ,chopped potatoes,season with salt & pepper and sliced olives. I also add lemon juice. Put the colander with the seasoned fish pieces over the pot cover and let the soup simmer. Towards the end I add a handfull of rice let it simmer for another 10 minutes or so then I turn off and by the time I serve it the rice will be cooked.
Serve with a twist of lemon and you can sprinkle some finely chopped parsley. You can also take some cooked fish and flake it in the soup.DSCF1127 DSCF1131 DSCF1132 DSCF1134 DSCF1135 DSCF1124
