Maltese bread pudding



We all have left over bread and either you toast it and make it into breadcrumbs or you make a bread pudding . My children do not like it too fruity ,just sultanas . I like it with candied peel & cherries . If you like it more fruity just add the fruit and nuts.

I made the bread pudding using a whole loaf of sliced sandwich bread or you can use a loaf of Maltese bread as well,cut it into pieces and soak in 1ltr tepid milk ,I used sweet condensed milk tin diluted,then squeeze the bread til its fine,add  2 beaten eggs ,4 tablespoons sweet cocoa powder,vanilla,1 teaspoon cinnamon,250g fruit of your choice ,1/2 cup coconuts,3 tablespoons butter,if you prefer it sweeter add 1/2 cup brown or white sugar,I also add a sachet of chocolate or vanilla custard or 1/2 cup of cornflour and 2 teaspoons baking powder. Mix well ,put in a well buttered and floured dish and bake in 180C oven .
