Lentils and rice


Finely chop an onion and large carrot,heat some oil in a pot and when its hot add 1/2 teaspoon mixed spice,1/2 teaspoon curry and 1/2 teaspoon cumin. Fry a bit to release the flavor then add the chopped onion and carrot. Fry a bit then add 2 cups rinsed and drained long grain rice and fry for a few minutes stirring,add 2 cups cooked lentils. I usually cook a cup of green lentils in 2 cups water drain and use but today I used a can of ready cooked lentils. Rinse in a fine sieve and add to the rice. Then add 4 cups veg or chicken stock,season and let it simmer until water is absorbed and rice is cooked let it stand about 5-10 minutes before serving.DSCF0322
