Lentil Salad


Cook 1 cup brown lentils in 3 cups water for about 25 minutes until just tender.Drain in a colander and rinse and let them drain well. In the mean time finely chop an onion and 4 cloves of garlic ,fry but be careful not to burn or else it will have a bitter taste.Finely dice a tomato and chop some parsley and mint . In a small bowl mix the juice of a lemon ,2 tablespoons olive oil,1 teaspoon of cumin and 1/2 teaspoon of all spice .Put the lentils in a bowl and mix in the tomato and herbs then the olive oil mixture. Can be made in advance ,in fact the flavor will be enhanced . Can be kept in the fridge or eaten at room temperature.DSCF3730 DSCF3728 DSCF3729
