Lemon,Thyme & garlic chicken veg bake

From farmers’ market I bought lovely fresh thyme and juicy lemons and decided to use them with chicken. Its a fresh ,aromatic dish of marinated boneless chicken thighs (chicken on the bone can be used as well) onions,lots of garlic,thyme,ras el honoud spice which is a middle eastern spice mix that is not hot ,potatoes,carrots,mushrooms and peas making it a complete meal.

Marinate some pieces of boneless chicken thighs in lemon juice ,6 cloves squeezed garlic,soy sauce and fresh thyme and 2 teaspoons ras el hanoud spice,salt and pepper. Let it marinate for an hour or more.
Fry 1 large sliced onion ,when soft add 5 medium potatoes cut into chunks,diced carrots,frozen peas and mushrooms. Season and fry stirring ,add fresh or dried thyme and 4 chopped garlic cloves. Then add 1 1/2 cups water and juice of 1 lemon. Let it simmer for 10 minutes. Put the mixture in a baking dish and put the chicken on top and pour the marinade on top .Bake in a 180 C oven until chicken is done .

Ras el hanoud spice mix
Ras el hanoud means the store’s best ,so its the mix made with the best spices. If you do not have or cannot find to buy you can make your own spice mix. Ras el hanoud differs from one country to the other,as every country has their own favorite spice and use more of it in their spice mix. So when you mix it your favorite spices.This is a basic ras el hanoud spice mix. Grind the seeds in a coffee or spice mill then mix the spices well .
1 tsp saffron
1 tsp paprika
2 tsp turmeric
1 tsp ground ginger
1/2 tsp cinnamon
1 tsp coriander seeds
1/2 tsp cayenne pepper
1/2 tsp dried preserved lemon
1/4 tsp allspice
1/2 tsp harissa
1/2 tsp caraway seeds
1 tsp cumin
1 tsp nutmeg
1/2 tsp mace
1/4 tsp cloves
1 tsp nutmeg
