Lemon & Strawberry Cake

used Biorinatura agave syrup from Dical House Mosta instead of sugar and made the buttermilk needed for this recipe adding 1 tablespoon Biorinatura apple cider from Dical House ,Mosta to 3/4 cup of milk and let it curdle . I prepared it first thing . Preheat oven to 200 C and grease and lightly dust with flour a 9inch cake tin or bunt tin.
Sift 1and 1/2 cups of self raising flour or else use plain then add 1 and 1/2 teaspoons baking powder and 1/4 teaspoon of salt.
In a bowl using an electric beater cream 75 g of butter with 2/3 cup of agave syrup,add 1 tablespoon of lemon zest ,1 teaspoon of vanilla and a large egg.
Stir in 3/4 cup of the buttermilk you prepared.
Add the sifted flour in batches until just combined do not over mix.
Put the batter in the tin and level it then scatter 1 and 1/2 cups of quartered strawberries on top and over them sprinkle a tablespoon of sugar .
Bake for about 20=25 minutes testing with a skewer .
