Kwarezimal (Traditional Maltese sweet for Lent )


I like sweets made with nuts and Kwarezimal is one of my favorite. There are different recipes this is how I make mine.
Roast 300 g almonds and after they cool put in a food processor and blend. I prefer mine coarsely ground. Put in a large mixing bowl and add 11/3 cups sugar ,2 cups sifted plain flour,grated zest of an orange and lemon,1 teaspoon cinnamon,1/4 teaspoon ground cloves,1 tablespoon cocoa. Whisk 2 egg whites and 1 tablespoon orange flour water and pour on to the dry ingredients to bind. If I need more liquid to bind I add orange juice. Knead until you have a stiff dough. With moist hands shape into ovals about 17cm in length and put on a lined baking sheet. Bake in a 190 C preheated oven for about 20 minutes.
