Kleaicha (Iraqi pastries filled with dates or walnuts and cocnuts)


These are traditional pastries made in Iraq for Eid the after Ramadan fasting month celebrations. They make a lot to share with their family and friends. These are made from a yeast pastry dough.
To make the pastry put 3 cups flour,1/4 cup icing sugar ,a pinch of salt,2 tablespoons nigella seeds and 1/4 teaspoon ground cardamom . In a small jug put 1 cup warm milk ,mix in 2 teaspoons sugar and 2 teaspoons yeast and stir well. Leave until frothyto use. Add 1 cup melted butter to the flour and stir well then pour the yeast & milk mixture. Mix until it binds. Add some more flour if required. Knead and place in a bowl or dish ,cover with a damp cloth and let it rise.
Prepare the date filling,put 2 cups chopped dates in a pot,add 1 teaspoon fennel,2 teaspoons ground cardamom ,1 teaspoon cinnamon,1/4 teaspoon cloves and 1 tablespoon sesame seeds,a table spoon of olive oil and 2 table spoons orange flower water. Stir occasionally and when its soft take off heat and let it cool a bit. Take cherry sized pieces and roll into bowls. Keep your hands wet so its easier to roll into balls without it being sticky.
For the walnut and cocnut filled pastries make the same quantity of pastry and for the filling put 1 cup cocnuts,1 cup chopped walnuts ,1/2 teaspoon cardamom,3 tablespoons orange flower water and 2 egg whites to bind the mixture.
to make the kleaicha take walnut pieces of pastry dough open with your fi ngers and put the date ball or 1 teaspoon walnut & coconut filling. Roll into balls or shape like small pastizzi(cheesecakes) pinching the pastry edges to close. Put on a baking sheet brush with beaten egg yolk and bake in 180 C oven until golden. These keep well in an airtight tin,taking care to let them cool well before storing them. Can also be frozen.
