Fried Aubergine dip


Yesterday I made the stuffed baby aubergines and today I used the flesh I scooped out to make a dip .
DSCF9413 I fried 1 large chopped onion until soft then I added the aubergine flesh and fried ,adding salt & pepper. Fried until it was done. Then I added 4 large squeezed garlic cloves ,2 tablespoon olive oil,juice of half a lemon and used a hand blender until it was a paste. Mixed in it 1/4 a cup finely chopped fresh parsley.
