Fish Dinner



This is a fish dinner that consists of awrata cooked in foil,spiced basmati rice,fried marrows in garlic and a raita which is a yogurt sauce made with cucumbers & mint

Awrata:

I cook this fish in a foil packet so it remains moist and just open the foil package for the last 5 minutes so it gets golden brown.

I line a dish with foil enough so it overlaps,cut 1 onion in thin slices,sweet green peppers or a mixture of red & yellow sweet peppers in thin slices,a chili pepper de seeded and sliced ,tomato thinly sliced ,season with salt and freshly ground pepper , ground cumin chopped mint & parsley and grated lemon rind, add some black or green olives. Some olive oil. Then prepare fish, rub inside with salt & lemon juice,crushed garlic & cumin,black pepper. I score the fish diagonally ,lay it over the onion & pepper mix ,drizzle some olive oil,seasoning ,lemon juice and chopped parsley. Wrap the foil over the fish like a package and cook for 30-45 mins depending how big the fish are

Spiced basmati rice

  • 500g basmati rice rinse under running water in a colander
  • 1 cup fine vermicelli pasta (tarja) broken in 3-4cm length
  • 1 cup roasted cashew nuts
  • 1/2 cup sultanas
  • 1teaspoon mustard seeds whole or ground

Prepare your spice mix :1/2 tspn curry (hot or mild whichever you like) 1 tspn freshly ground pepper,1/4 tspn ground cloves ,1/4 tspn ground cardamom & 1tspn tumeric

  • 1 chopped onion
  • 1ltr stock or water
  • salt

Heat about 3 tablesppons oil in a pot and when its very hot add a teaspoon of mustard seeds they will pop and splatter letting off the flavor. Have your spices ready and add them to the hot oil 1 tspn all spice,1/2 tspn curry (hot or mild whichever you like) 1 tspn freshly ground pepper,1/4 tspn ground cloves ,1/4 tspn ground cardamom & 1tspn tumeric.add the broken vermicelli and stir until they are golden, then add a finely chopped onion ,fry a bit then add 1/2 cup sultanas and 3/4 cup cashew nuts and fry while stirring. Then add 500g basmati rice which you have rinsed in a colander ,mix it with the onion,sultana & cashew nuts for about 2 minutes then add 1ltr water or stock ,add salt then cover and simmer ,do not stir again . To know if its ready when you lift the lid you will see small holes on the top and the water is all absorbed. Take off heat and let it stand for a few minutes before serving.

Raita;

  • 1 cucumber finely chopped
  • 1 big pot greek yogurt
  • finely chopped mint & parsley
  • seasoning

mix all the ingredients together and chill until ready to serve

Fried marrows in garlic

  • 4 large garlic cloves finely chopped
  • 4 large marrows cut in chunks
  • 1 large onion chopped
  • seasoning

Fry the onion in and add the marrows and let them fry a bit add the garlic and seasoning lots of freshly ground pepper,cover and let it simmer on low heat .

I serve this meal with a large fresh salad & of course crusty Maltese bread .
