Fig & lemon cake


A delicious cake made with dried figs and lemon zest.

Ingredients:

  • 1/2 cup oil
  • 1/2 cup milk
  • 1 large egg
  • 1 & 1/2 cup flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1 & 1/2 teaspoon grated lemon zest
  • 1 and 1/2 cups chopped dried figs

Method:

  1. In a jug mix the wet ingredients,oil,milk & egg.
  2. In a bowl sift the flour and baking powder,add the sugar.
  3. Pour the liquid mixture and mix until flour is incorporated ,just until smooth do not over beat.
  4. Fold in the figs and lemon zest .
  5. Prepare a 9in cake tin or dish and grease and line bottom with parchment paper.
  6. Bake in 160 C oven for about 35-40mins depending on your oven ,check with toothpick to see if it done.
  7. After 5 mins turn out of tin and cool on wire rack.
