Fig and apricot upside down cake


Saturday morning at farmer’s market I bought some figs which were quite ripe. My husband loved the apple upside down cake so I decided to make him similar with figs. As I was getting out the ingredients from the larder I noticed I had a few dried apricots left so I thought I use them as well.
Instead of the cake tin I made it in a tart dish which is larger in diameter than the cake tin so the cake did not come as high as it did when I made the apple upside down cake but it was really delicious,juicy and moist and the figs tasted heavenly,we had to take a piece and taste while it was still warm did not wait for it to cool!
Grease and line a cake tin or tart dish with baking paper ,greasing the baking paper as well. Put 2 tablespoons honey or syrup on the base spreading it. Then place the sliced figs and I put some dried apricots too.
In a bowl sift 1 cup self raising flour.1/4 cup sugar.1/4 cup soft butter,1/2 cup yogurt and grated rind of a lemon and 1 tablespoon lemon juice and 2 beaten eggs . Mix until its a smooth batter do not over beat. Spread batter on top of fruit. Bake in a pr heated 160 C oven (note if your oven is not fan assisted 175 C) Bake until the top is slightly golden and when check with a skewer in the middle if it comes out clean its ready. Leave it to cool for about 8 minutes and turn onto a plate.DSCF9915 DSCF9912
