Crostata ricotta & peaches


This is an Italian recipe of ricotta & peaches.I made it with canned peach halves but it can be made with fresh peaches too.
Prepare a tart dish with the pastry. I used ready rolled puff pastry but short or sweet pastry can be used.
Strain the canned peaches well and dice 3 peach halves and slice 3 other .
In a bowl mix 200g ricotta,2 eggs ,1 teaspoon vanilla,1/2 cup ground almonds,2 tablespoons honey or sugar according to taste and the diced peaches.
Put the ricotta mixture on the prepared pastry,arrange the peach slices on top.
Pull pastry edges towards center then sprinkle some golden sugar on top and bake in preheated oven until ricotta is firm and pastry is golden.DSCF9301 DSCF9315 DSCF9299
