Chicken,spinach & mushroom calzone


I made these using ready rolled pastry dough. I always keep ready made pastry in my fridge so if Im in a hurry or its been a busy day I can create a meal in a short time. I had pizza and puff pastry. I must say both came good but the pizza calzone had the more likes from my family so next time i make this will be using pizza dough ready made or home made by me.

Ingredients:

2 pkts ready rolled dough

1 large or 2 chicken breasts cut into bite size pieces.

2 cups sliced mushrooms or 1 large can

250g spinach

2 chopped onions

1 teaspoon curry (hot or mild according to taste)

seasoning.

100g ricotta

1 beaten egg add half to the ricotta and mix it in

chopped dolce provolone cheese  (I had some grated mature cheddar cheese left over from making the aubergine pizza and added it as well )

sesame or nigella seeds to sprinkle on top.

Method:

Fry the onions and curry and fry until transparent

Add the chicken fry until chicken is cooked.

Then add the mushrooms and spinach .

Season and cook for a few minutes.

Open the rolled pastry and divide the chicken mixture ,put on each piece of pastry .

Over the chicken mixture put some ricotta then the cheese.

Brush the edges with beaten egg and fold over closing the edges and tuck in the ends to make a sort of parcel.

Use a knife and make about 4 small cuts on top so it will not puff up while cooking.

Brush with remaining beaten egg ,sprinkle some sesame or nigella seeds on top and bake in a 180 C oven until pastry is golden.

Can be served hot or warm.
