Chicken & veg couscous


My kids love couscous so I make it often  but try to do it in different ways . I made this using left over roast chicken .

  • 500 g couscous
  • 300 g chopped chicken
  • 1 chopped large onion
  • 250 g mixed veg (carrots,peas & corn)
  • 1 teaspoon curry
  • 1/2 teaspoon of each turmeric & cumin
  • 300ml chicken stock
  • salt & pepper

 

In a large saucepan fry the chopped onion and add the curry & spices ,after mix in the veg and fry for a few minutes then mix in the chicken . Add the couscous and mix well ,pour over the chicken stock stir ,switch heat off, cover with a lid and leave until couscous absorbs the stock and swells. Fluff with a fork and serve with a side plate of fresh salad .

You can make it using chopped chicken breast or boned thigh meat in that case add after you cook the onion and make sure they are cooked through .

I also made this using left over lamb & beef roast .
