Chicken & chickpea stew ,Lentil soup & hummus

This is a typical meal that I serve my family during the fasting month of Ramadan . The Chicken & chickpea stew is called Teeshrib and it is an Iraqi recipe. Lentil soup & hummus are more familiar with us but we all have our personal recipes and I wish to share mine with you. If you should have any question or query feel free to ask . 🙂

Chicken & chickpea stew: 8 chicken pieces

  • 4 medium or 2 large onions cut into chunks
  • 6 crushed or squeezed garlic cloves
  • 2 tins chickpeas drained or 3 cups cooked chickpeas
  • 6 large potatoes quartered
  • 1 teaspoon each of turmeric,cumin,all spice ,curry
  • 500ml chicken stock
  • flour to dip chicken seasoned with salt,pepper,1/2 teaspoon
  • turmeric.


Wash chicken pieces and pat dry rub with some salt then dust with some flour.

Heat some oil in a large saucepan and fry the chicken pieces on both sides until golden and reserve in a dish.

In same saucepan fry the onions and add the spices.

when the onion is soft add the potatoes and mix and fry a bit.

Pour the Chicken stock ,seasoning,garlic and chickpeas.

Transfer the chicken pieces to the saucepan .

Cover and simmer until chicken is tender.

Lentil soup:

  • 1 pkt orange lentils
  • 1 small onion chopped
  • celery stalks chopped
  • 1 teaspoon cumin
  • grated rind and juice of 1 lemon
  • 1 ltr chicken stock


Fry the onion and celery in a pot add the cumin ,then add the lentils and mix  frying it for a minute or 2 .

Pour the chicken stock, season to taste and the grated rind and lemon juice.

After it boils put it on low heat to simmer until the lentils are well cooked.

Blend until creamy .

Hummus: 2 cans chickpeas some water reserved

  • 4 cloves garlic
  • 2 lemons
  • 1 and 1/2 cumin
  • olive oil
  • tahini paste ( this is sesame seed paste)


In a food processor blend the chickpeas and garlic until creamy

Add the lemon juice and 2 tablespoons tahini paste.

cumin and seasoning.

Blend well .

spoon in a serving dish and chill.

In the picture there is also a plate of deep fried eggplant ,marrow & green pepper slices.And a plate of toasted bread with olive oil and wild thyme & sesame seed mixture called ‘zatar’ . Also a fresh green salad .The pitta bread is missing was keeping it warm in the oven.
