Chicken casserole


I like casseroles or hotpot recipes because you have a complete meal in a pot or dish . You can use chicken pieces with the bone or boned. I used boned thigh .

I dry rub the chicken with spice and seasoning . put half a teaspoon of salt in a small bowl,add 1/2 teaspoon black pepper,1 tablespoon mixed spice and 1/4 teaspoon dry ground garlic and 1 teaspoon sweet paprika. Mix the spice and then sprinkle on the chicken pieces and rub in well.
Heat some oil in a large saucepan,put 2 large onions cut in thick slices and fry a bit,add 3 bay leaves,1 tablespoon mixed spice ,then add 5 sliced carrots and some potatoes,I did not peel I just washed well and cut in thick slices. Fry with the onion ,season well and let it cook for about 5 minutes ,then add 1 large ti chopped tomatoes ,mix and fry for about 2 minutes then add 4 chopped or sliced garlic cloves . If you want an intense garlic taste chop finely ,slice if you do not want an intense garlic flavor. Add 1 cup chicken stock or water . Add 1 cup frozen or tinned peas and 1 small tin sweetcorn. Let it simmer for 10 minutes. Preheat oven to 180 C and prepare an oven dish. put the vegetable mixture in the dish . Sprinkle 1/2 teaspoon ground fennel on top. Then place you spice rubbed chicken pieces on top. Cover with foil and bake for about 35 minutes. If using boneless chicken thigh or chicken breast keep in mind it will take less time to cook.
