Cheats Chicken Tikka served with spicy rice with cashews & sultanas.

I made this for my daughter ,she saw an Indian supper on a cookery fb page and told me that she would  like some. She was in studying so I thought I make it for her and I thought of making enough for all the family because I was sure that they would want some as well and I was right ! Luckily I like to keep emergency food in my larder like the ready made Indian sauces and frozen cooked shredded chicken in my freezer.

I just sauteed a chopped onion in a sauce pan ,
the shredded cooked chicken then I added the Tikka Masala ready sauce ,
filled the jar 3/4 with water and rinsed the remaining sauce in the jar adding it to the saucepan and my daughter wanted me to add some sweetcorn and I obliged even though I would have preferred to add some peas but in my family I am the only one that likes peas . I let it simmer for about 10 minutes on low heat .

For the spicy rice I heated some oil until it very hot in a pot.
Then I put in a teaspoon of mustard seeds
and 1 teaspoon cumin seeds and they will pop and splutter releasing their flavours.
Then I add while mixing 2 teaspoons hot curry (if you do not like hot use mild curry)
1 teaspoon turmeric,
1/4 teaspoon ground cloves,

1 teaspoon cinnamon,
3 crushed cardamom pods or 1/2 teaspoon ground cardamom.
Frying the spices makes it more flavorful.
Then add a chopped onion ,
a cup of cashew nuts,
a cup of sultanas and stir while frying.
Add 500g basmati rice that has been rinsed and strained ,
mix it in the and fry for 2 minutes
then add 1 ltr water or stock. Season with salt to taste. Cover and when it starts to boil put on low heat and let it cook until water is absorbed.

I also served with it some mini vegetable  samosas I had in in my freezer. All this was ready in less than 40 minutes. And it was good because all tucked in and left nothing on their plates 🙂
